Es algo familiar, c\u00f3modo y construido sobre una manera muy concreta de hacer gelato.<br \/>El nuestro funciona de otro modo.<br \/>No tenemos vitrina. Y tu gelato no est\u00e1 hecho de antemano.<br \/>Se mezcla en el momento, al pedirlo.<br \/>No es una decisi\u00f3n est\u00e9tica. Es la consecuencia directa de c\u00f3mo elaboramos el gelato desde el principio.<br \/>Sin az\u00facares refinados ni estabilizantes artificiales, el gelato no se comporta igual. No puede pasar horas en una vitrina y mantener la textura que buscamos. No conserva esa forma artificialmente perfecta.<br \/>As\u00ed que, en lugar de adaptar nuestros ingredientes al sistema, cambiamos el sistema.<br \/>Cada porci\u00f3n se prepara cuando la pides: mezclando la base, incorporando texturas y montando los sabores en tiempo real. Lleva un poco m\u00e1s de tiempo.<br \/>Pero es en ese tiempo donde sucede todo.<br \/>Es donde la textura se vuelve m\u00e1s suave, m\u00e1s fluida. Donde los sabores se integran en lugar de quedarse uno al lado del otro. Donde cada elemento se a\u00f1ade con intenci\u00f3n, no se sirve como un producto ya terminado.<br \/>Y, al hacerse as\u00ed, no hay dos raciones exactamente iguales.<br \/>Puede que en una el equilibrio del veteado sea ligeramente distinto, que en un bocado el crujiente se note m\u00e1s, o que en otro aparezca un remolino de sabor m\u00e1s profundo. Va evolucionando mientras lo comes.<br \/>Eso no es falta de uniformidad.
